Recipe turkey and ham pie. Preheat the oven to 180c/360f/gas 4. In a saucepan large enough to hold all the meat, melt the butter and add the chopped onion. If using leftover meat, the total weight needs to be about 650g.
Cook for a minute, stirring. Heat oven to 200c/180c fan/gas 6. In a medium mixing bowl, combine the brown sugar, granulated sugar, flour and salt.
Season with salt and freshly ground black pepper and cook. Stir the flour into the veg until completely absorbed, then gradually stir in the stock. Add just enough iced water to bind the pastry together.
Cook, stirring constantly until the mixture bubbles and thickens. Fruit sauce for christmas pudding. Lightly dust the work surface with flour and roll the dough.

Remove all of the skin as it will become slimy in a pie. Add the garlic and anchovies, fry for 30 seconds, then add the turkey and ham. 500g cooked turkey, dark and light meat, in large pieces.
