Make the stock in a slow cooker overnight. 12 cups water, 1 turkey carcass, 2 bay leaves, 4 tablespoons fresh parsley, 2 chicken bouillon cubes. Fresh garlic is the best for adding in savory flavor.

Heat the strained broth (or refrigerate it to make the soup the next day) and add the diced vegetables and garlic before. It’s cheap to make, works with any part of the turkey you like (even the bones!), and it’s a welcome change from days of turkey sandwiches.
